I think I'd like a mini or bug for a daily driver. Only problem is my daily is VERY reliable but I would like to ditch the mot and road tax headache and drive a nice classic all the time. Would need to be able to handle the winter as well and start on the button.

Not sure if a 40++ year old car would make a good daily driver, depends on your mileage I suppose. Certainly where I am in north London, going back to say a 82 Ford etc would not be good, and as for driving a yank of sorts would be certainly out of the running fuel wise. Classic/old cars are nice to drive now and then, but their “day” as an everyday driver has passed. Yes, some of them could do it, but would you want to.

For a moment there James I thought we'd taken the same photo of the same car at different events. Alas, different reg.

I think a pre '82 car could be used as a daily if you really know the vehicle and its potential problems. You'd need a source of parts and servicing items too. An old Cortina or Escort would perhaps be a better bet than many. Insurance would potentially be your main issue as (if a daily driver to work and back) possibly may not be covered by a a classic policy.
