1965 327 C2 SERVO & Discs ............What is the best Brake fluid to use?

Hi ...Just fitting all new brake lines and a Servo on my 65 with discs front and back ..the callipers have new s/s liners and pistons with o ring seals ..What is the best brake fluid to use Dot 4 or 5.1 ?
