[Choosing a name is hard]

If I wanted to change the last part of the exhaust the silencer for a straight through pipe, would it increase the engine sound a lot or more importantly would it raise the noise level to an illegal level?
And if I just wanted the end bit as anyone got any recommendations for which one to use?

If wanting to learn about exhaust and sound as to Dba levels
I did a very in-depth project with my 1999 C5 and includes the maximum sound level allowed here in the USA
But in short, way too loud with no mufflers, around 100 Dba, my ears still ring

Without mufflers it will be loud, NO very loud.
I recently imported a 20th anniversary 1979 trans am , and unknown to me it had no exhaust boxes ( mufflers) on it. Just straight through pipes. Nice job tho, even had the factory exhaust tips fitted, which look soo good on 2nd generation Pontiac F-bodies.
On the journey home from Southampton to north London the noise was deafening, even the 8 track couldn’t be heard over the drone.
First job was to fit exhaust boxes, after that it sounded lovely.

My 2001 C5 has no rear silencers and although loud when it's floored has absolutely no drone whist cruising. The car was like this when purchased 4 years ago and whoever manufactured the pipework has done a lovely job. I was also given the rear system that was removed from the car and it too look to be very well made, but i've no idea the make. The previous owner said that with the silencers it sounded like a Ferrari, and he didn't like that, hence the change. I've seen no need to change things, and no complaints from anyone regarding noise.

Those of us with C2 and C3 corvettes with side exhausts will know how loud the V8’s can be without mufflers. On coupe C2’s it can be very annoying on longer trips once the novelty of the “noise” wears off. Granted the sound is right by your ears as opposed to behind you.
On that trip home from Southampton, it soon became very tiresome in that T/A, and I’ve used cars with side pipes since 1980, so am quite used to V8 loudness.

Have a read of teamzr1's linked post, then have a little search on YouTube for the type of exhaust set up on a C5 and you'll find a clip pretty much guaranteed.

Swapping the H pipe for an X pipe will change the sound quite significantly, removing the mufflers will make it louder but it's not loud enough to really attract attention from anyone over some of the obnoxious exhausts you hear on Mercs/BMWs.

Alot of us run C5s without mufflers.
