1981 C3 -Thermostat housing - what are these sensors?

I was trying to replace my thermostat this afternoon and unfortunately whilst trying to remove some of the jungle of pipes, managed to snap off two vacuum hoses off one of the sensors sticking out the top of the thermostat housing.

Two questions, firstly, what are the two sensors and why does each of them have two rubber pipes going into them?

Second, do I need these or are they for the emissions stuff?
